Coconut Creamer
My sweet cousin and I were chit chatting on the phone and she shared this awesome coffee creamer recipe with me.
Frothy Coconut Creamer
1 can coconut milk
1 egg
--blend these 2 ingredients together
1 egg
--blend these 2 ingredients together
2 T melted coconut oil
Add the oil to the mix and blend.
Add to coffee and stir. Enjoy!
You may store in the refrigerator up to a week
Cashew Butter
Mr. Liam could not keep his spoon out of the homemade cashew butter. Nom Nom!
Cashew Butter
2 cups salted cashews
Blend the cashews in the food processor until it is smooth and nice ball. You will need to stop and scrape the bowl every now and then, but be persisent. Do NOT add water. It took about 5 to 10 minutes.
2 Cups nuts, yields 1 Cup butter.
Use in recipes, eat alone or with fruit, bread, veggies.

Note: Every recipe I researched called for raw cashews and salt...sometimes another oil. I was nervous about using my salted cashews but they worked out great!
