Creamed Spinach-Nom Nom

I made another creation....Creamed Spinach with Nutmeg. My family gobbled it up before the bacon and cheese wrapped pork! I now know to always make extra. :)

2 Tb chopped white onion
4 Tb Butter
2 Garlic cloves chopped
4 handfuls baby spinach
3/4 C Heavy whipping cream
Sprinkle of Nutmeg
1/2 C Parmesan Cheese

Heat a sauce pan on medium heat. Let the butter simmer. Throw in in your onions and garlic. Let them lightly brown. I quickly chopped up my baby spinach while the onions and garlic were browning--not a necessary step. Throw the spinach in with the onions and garlic. Cover for about 2 minutes. Sprinkle in your nutmeg (to your taste...we use about 1/4 tsp). Turn your heat down to med low and add your heavy whipping cream, let it thicken, stirring occasionally. Right before you serve stire in your Parmesan Cheese until it is melted. Serve! This would be an excellent sauce for topping chicken and pork.
