My little sports girl. She LOVES basketball, unfortunately the ball did not return the love today.
The smell of the hot desert and the earth after it rains. The sound of leaves crunching under my feet. The breeze dancing in the leaves of trees. These are the simple things God has given us and these are the simple things that inspire me.

Bunless Hamburgers w/ Black Bean Topping
My family devoured this meal. In fact, my husband told me I needed to write it down so I don't forget how I made it. I'm none for throwing together meals and not remembering what I did!
Ingredients:
1.5 lbs hamburger
handful spinach chopped
1/4 c feta cheese crumbs
1 Roma tomato chopped
1 green onion chopped
1 egg
2 tsp Penzeys Forward! (Thank you Pops & Bijou!)
Romain Lettuce
1 can Black Beans
2 Garlic Cloves
1 Chili Pepper
2 tsp Salt
1 T. Olive Oil
Optional
Sour Cream
Fresh Basil
Mix the top group of ingredients together. Make patties. Mine made 3 large patties and 3 smaller patties (child size). Make the center of the patty thinner for even cooking--a trick I learned from Rachel Ray. Brown hamburgers on each side and set on platter.
While your patties are cooking, chop the Romain lettuce and set aside.
In a sauce pan, add olive oil, salt, chopped chili pepper and chopped garlic cloves. Let saute briefly then add your rinsed black beans. Bring to simmer.
To serve:
Put a bed of lettuce on your plate. Place hamburger patty on top. Top with the black beans and enjoy!
I had ever intention to add fresh basil and sour cream to the top of mine, but completely spaced the idea.

Chicken & Basil Wrap
A new recipe :) Nom nom!
2 tortillas
2 tsp plain yogurt
handful of spinach
4 T feta cheese (or to preference)
2 sprigs fresh basil
1/4 red pepper (sliced thinly)
1/4 tsp oregano
1/2 tsp garlic salt
1 T olive oil
2 chicken tenderloins (or your preference of type)
Heat a pan to Medium. Toss in olive oil and chicken. Sprinkle chicken with garlic salt and oregano. Cook until done. I tore my apart as it cooked so it would be easier to eat as a wrap.
As your chicken is cooking, spread out your 2 tortillas. Spread 1 ts of plain yogurt on each one. Spread out your spinach and red pepper. Sprinkle on your feta. Add the chicken when it is cooked until juices run clear. Garnish with fresh basil from your garden! ;)
--Feel free to experiment and add veggies. I would have added diced tomatoes, but sadly I was out. Maybe I'll start one on the side of the house...hmm..
